Our take on the French classic 'Chicken with 40 cloves of garlic'.
Preheat the BBQ, and clean well. Season the kingfish tail with salt & pepper, rub with olive oil and then proceed to colour the skin on both sides. Place the kingfish into a baking tray or heavy based pan, add the garlic cloves, thyme, butter & fish stock.
Close the lid of the BBQ and cook for approx 12 mins on either side. Remove the fish from the tray or pan, place onto a warm serving platter. Check the sauce for seasoning, add salt, pepper and lemon juice to taste if you wish and pour over the kingfish tail. The kingfish should flake away off the bone.
