FISH BUTCHERY BASICS WITH PAUL FARAG Demonstration of how to break down a large Australian fish. Paul explains how to dry gut/scale/fillet, and how to use the offal and different cuts of the fish. Paul will prepare snacks throughout the night using parts of the fish being cut. Take the chance to tour the butchery and our dry ageing cool room. Each guest will receive a two portions of the fish prepared on the night to cook at home. To accompany your snacks enjoy PS Soda drinks or your own BYO.
