In this pack includes 4 medallions of Walker's Family Line Caught Mooloolaba Swordfish. These stunning steaks have been crumbed in a mixture of course panko breadcrumbs, smoked corn polenta & oregano.
The best way to cook these schnitzels are in ghee (which is available in store) or alternatively use a cooking oil of your choice, be it grapeseed, canola or an olive oil.
Cook both sides for approx 1min each over a medium to high temperature to ensure a beautiful crunchy golden exterior.
The failures of a schnitzel are starting with not enough oil in the pan, this will result in a scorched crust where the dry crumbs burn instead of fry.
Too low a temperature will result in a schnitzel that absorbs alot of the fat, eventually it browns as the temperature rises but by this stage, the crumb is completely greasy, soggy and by no means the crispy light coating we are hoping for.
3-4 tablespoons of oil for every two medallions will be enough and please wait for a light haze to appear over the pan, you know then the pan is hot enough.
Along with the fish comes one of my favourite condiments, Charcoal Tomato Dressing. If you love it as much as I do, then grab the whole fish cookbook as the recipe is included within. The dressing is made up of charcoal grilled cherry truss tomatoes, this grilling over coal gives the tomatoes a lovely smokiness and complexity. It is seasoned with anchovy, capers, fried rosemary and Chardonnay vinegar. Place the charcoal tomato dressing on the plate first, then top with the cooked schnitzel. 
Garlic Mayonnaise because you always need some sauce with a schnitty and a wonderful green salad and shallot dressing.
Make sure your salad is dressed at the last minute! No one likes a soggy salad...
