CORAL TROUT LAKSA!! WHAAT... 
This is a dish I have been wanting to do for years but have not had the right kind of venue to cook it in... Well here's my opportunity. I hope you love it!
We make a Laksa paste from all the favourites you would expect, but we have snuck in a few native ingredients in the form of native turmeric leaf, native ginger and a pinch of Pepperberry.
This dish features Line caught Coral Trout. This very special fish is caught by fishermen Ben Collison in Bowen QLD. Check out @collisonreeffish on Instagram to see the incredible lengths Ben goes to in his work to source this premium product. Ben's Coral Trout is a Delicious Produce Gold Medal winning fish.
First:
To cook the noodles, bring a pot of water to a boil, add the noodles and boil for 4 minutes then drain water away. Place noodles in serving bowls.
Second:
Bring the soup to a boil, remove the pot from the heat and let rest for a minute, then place the Coral trout pieces into the broth and cover with lid.
Cook OFF THE HEAT (using remaining heat in the broth) for approx 4minutes or until the fish pieces are translucent and just coming apart under the pressure of a spoon. 
Ladle the soup and fish over the noodles into large then proceed to add the fried shallots, fresh herbs, green onions & chilli (if you like).
Additional salted chilli paste is there as a condiment to add fruitiness and additional seasoning. They have been salted for months so they carry very little heat.
Not that you really need anything else to accompany this magnificent broth but I enjoyed eating a chilled Buckwheat Salad with the portion that I ate.
The salad is very simple, cooked buckwheat & fermented onions.
