Slice the top of the crumpets evenly and pan fry in clarified butter until golden brown and crispy on the top and bottom. Serve warm with the cream fraiche & trout roe so that guests may help themselves to the cream and roe. Or for bonus points assemble for a loved one and serve for breakfast in bed.
