THE RUN DOWN
Kofta in the simplest form consist of balls of minced or ground meat—usually beef, chicken, lamb, or pork—mixed with spices or onions.
12 months ago we did Tuna Koftas at the Carriageworks Farmers Markets and everyone loved how similar they tasted to true Koftas.
We thought it would be an excellent time to revisit these wonderful morsels.
Decant the condiments into serving bowls and warm the pita pockets through in an oven set to 180 degrees Celsius till the outside is beginning to crisp up and the inside is soft.
For the koftas, brush them with a little oil and grill either on a cast iron grill pan or if you have one, a little hibachi grill. These Koftas won't take long to cook so apply even colour to the outside approx 1 min each side then remove and rest for a further minute.
Season well and serve alongside all the other elements of the dish.
The Pita Pockets, Garlic Sauce and Koftas alone are definitely worth signing up for!!
