- Crumbed Hapuka Medallions
- Cooked Koshihikari Rice
- Yuzu Kosho Mayonnaise
- Ginger, Shallot Condiment
- Boiled Egg
To cook the Hapuka Katsu, heat 3 tablespoon ghee in a wide frypan to a light haze approx 2mins.
Fry the Hapuka for approx 2mins on each side till golden brown.
Remove from the pan and allow to rest for 2mins.
Heat the rice in the microwave for approx 90 secs and serve with the fish and all the other condiments
