Preheat the BBQ, Remove the chop from the fridge and allow to come to room temperature. Season the chop generously on both side with cracked black pepper, ground fennel and salt. Sear the chop on the BBQ turning every minute for approximately 4 minutes in total. Leave to rest in a warm place then carve and dress with the softened kelp butter.
