SATURDAY 31 OCTOBER / 2 SERVES / Tasmanian Sea Urchin Spaghetti
Two of the best ingredients going around right now, Mitch Orr's Fresh Spaghetti & this unbelievably good Sea Urchin from Tasmania.
Boil your spaghetti in salt water for approx 2-3mins or till you are happy with the degree of doneness
In a frypan set over a medium heat, add the infused olive oil included and warm very gently till fragrant. Add the cooked spaghetti to this pan along with a few tablespoons of the starchy pasta cooking water. This will aid in thickening the juices in the pan
Once coated in the oil approx 1min add the parsley. Check seasoning for salt and pepper
At this point, the uni can be added and melted in to the pasta or alternatively it can be dished up and the little tongues can be draped over the top
Our garlic bread can be baked for approx 10mins at 180 degrees Celsius till crisp and the butter is melted.
Dress the salad lightly and serve alongside the pasta
